- 60% of the wood used the in building is salvaged from an old mill and contractor scraps, including the floor, exposed trusses, trim, wall studs, rafters, porch decking and railings.
- Foundation uses a insulating block system that eliminates the use of forms and reduces concrete consumption, product called ICEblock

- Low-toxic water based wood finishes used inside from Portland Company called Timbertech
- High efficiency propane heating and air conditioning systems.
- Fresh local produce used in restaurant, little waste generated, and all food cartons and boxes are recycled
